That's the difference between LJ cut and LJ cut with text. What ever text you put between the quotations marks is the text that shows up in the cut.
Note: if you're going through your archive and click on a past entry, what ever text you had in the lj-cut will not show up, you won't even see evidence of a lj-cut, period.
And to end an LJ-cut for mulitple cuts / text after the cut, it's simply:
[/lj-cut]
